Cancer-Friendly Oat Cran Bites: Nutrient-Rich Snack
My husband is currently going through immunotherapy for his cancer treatment, and with that comes digestive upset. I’ve been tinkering around in the kitchen trying to come up with digestively friendly desserts for him to enjoy. These cookie bites satisfy your dessert craving while being low FODMAP and Colitis friendly. Please note I am not a medical professional and cannot treat or diagnose. I am going off of my husband and his reaction to the foods I make. Individual tolerances may vary.

Cancer-Friendly Oatmeal Cranberry Bites: Nutrient-Rich Snack

Ingredients
- 2 cups old-fashioned or rolled oats
- 1 cup unsweetened applesauce
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/4 to 1/2 cup maple syrup adjust based on sweetness preference
- ¼ to ½ cup oat flour to thicken
- 1/4 cup dried cranberries ensure they are soft
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine old-fashioned oats, unsweetened applesauce, cinnamon, vanilla extract, and maple syrup. Mix well.
- Add dried cranberries to the mixture, ensuring they are evenly distributed.
- Form the mixture into cookie shapes and place them on a baking sheet lined with parchment paper. Press down slightly
- Bake for approximately 10-12 minutes or until the edges are set. May need up to 14 minutes.
- Allow the cookies to cool before serving.
Notes
I use 1/2 cup of maple syrup because we like it sweet. Adjust to your preference. If the mix is too wet, add oat flour either by blending oats or buying oat flour. Check at ten minutes, mine needed 14.
