Ingredients
  

  • 2 cups old-fashioned or rolled oats
  • 1 cup unsweetened applesauce
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 to 1/2 cup maple syrup adjust based on sweetness preference
  • ¼ to ½ cup oat flour to thicken
  • 1/4 cup dried cranberries ensure they are soft

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine old-fashioned oats, unsweetened applesauce, cinnamon, vanilla extract, and maple syrup. Mix well.
  • Add dried cranberries to the mixture, ensuring they are evenly distributed.
  • Form the mixture into cookie shapes and place them on a baking sheet lined with parchment paper. Press down slightly
  • Bake for approximately 10-12 minutes or until the edges are set. May need up to 14 minutes.
  • Allow the cookies to cool before serving.

Notes

I use 1/2 cup of maple syrup because we like it sweet. Adjust to your preference. If the mix is too wet, add oat flour either by blending oats or buying oat flour. Check at ten minutes, mine needed 14.
