Crafted with care and consideration by The Whole Cook, I adapted this one-pan wonder to suit my husbands needs. This features lean ground chicken but if your body tolerates turkey that is the OG recipe, vibrant vegetables, and a thoughtfully curated selection of herbs. While I am not a doctor and cannot treat or diagnose, this recipe is designed to be gentle on the stomach, making it an ideal choice for those with digestive sensitivities. Low FODMAP and Colitis-Friendly Turkey/Chicken and Veggie Skillet
Ingredients
- FOR TURKEY
- 1 pound lean ground turkey or chicken as tolerated
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon chili powder
- ½ teaspoon dried oregano
- ¼ teaspoon paprika
- ½ teaspoon garlic replacer * you can do without it but it helps
- 1 teaspoon garlic-infused olive oil *
- FOR VEGGIES
- 1½ tablespoon garlic-infused olive oil *
- 1 to 2 medium zucchinis cubed
- 1 to 2 bell peppers any color but green, cut into 3/4 inch pieces
- 2 green onions green parts only, sliced
- ½ teaspoon salt
- ½ teaspoon garlic replacer
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- ½ cup water
- 2 tablespoons tomato paste
- 5 oz fresh spinach one bag
Instructions
- Heat 1 teaspoon garlic-infused olive oil over medium-high heat
- In a skillet, cook lean ground turkey with 1 teaspoon salt, ½ teaspoon black pepper, chili powder, dried oregano, paprika, and garlic replacer
- Once the turkey is cooked, set it aside.
- Reduce the heat to medium. In the same skillet, add 1½ tablespoons of garlic-infused olive oil. Sauté 1 to 2 zucchinis, 1 to 2 bell peppers, and green onions. Season with salt, garlic replacer, dried oregano, dried basil, paprika, black pepper, and add water. Cook until vegetables are tender. (See notes)
- Mix in 2 tablespoons of tomato paste with the veggies.
- Combine the cooked ground turkey with the vegetable mixture.
- After combining poultry and vegetables, dump a bag of spinach on top and cover it, Let it sit about five minutes and stir.
- Cover for a few minutes to let the flavors meld
- Serve this low FODMAP and colitis-friendly meal with a side of jasmine or basmati rice. Enjoy!
