
Blueberry Cinnamon Oatmeal Bars – Managed Colitis and Digestively Friendly!

Here’s the thing, when you’re baking desserts aimed at digestive wellness they might not be as pretty and the texture may be off, but the flavor is always going to be there. I cannot stress this enough – always sift your dry ingredients. I will be repeating this.
This is a digestively friendly dessert for those with colitis who are in active cancer treatment and need something gentle on the stomach, or for anyone looking for a healthy dessert without any added sugars. Enjoy! My husband did!
While I am not a medical professional and cannot treat or diagnose, I can say these recipes have been tested on him successfully. He had colitis symptoms and I immediately changed his diet and he hasn’t had a single side effect since. Peanut Butter Blueberry Cinnamon Oat Bars
Ingredients
- 1 cup oat flour blend oats finely for this/ I buy mine ground
- 1 cup old-fashioned or rolled oats
- 1/4 cup almond flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon adjust to taste
- 1/4 teaspoon sea salt
- 1/2 cup all natural peanut butter the kind you have to stir
- 1/4 cup maple syrup
- 1/4 cup honey
- 1/4 cup almond milk or milk of choice – I like Vanilla Almond Milk
- 1 teaspoon vanilla extract
- 1 cup frozen blueberries coated in 1 tablespoon oat flour
- Optional: Handful of dried cherries chopped also toss in flour
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, sift together well all dry ingredients except for the rolled oats. This includes 1 cup oat flour, 1/4 cup almond flour, 1/2 teaspoon baking powder, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon sea salt.
- Mix the rolled oats into the sifted dry ingredients.
- In a separate bowl, whisk together the wet ingredients. This includes 1/2 cup all-natural peanut butter, 1/4 cup maple syrup, 1/4 cup honey, 1/4 cup almond milk, and 1 teaspoon vanilla extract.
- Add the dry ingredients into the wet mixture and stir until everything is evenly combined.
- In a separate bowl, gently toss 1 cup frozen blueberries and chopped dried cherries (if using) with 1 tablespoon oat flour until they are lightly coated. Add the coated berries to the batter and fold them in until evenly distributed.
- Press the mixture into the prepared baking pan, spreading it evenly.
- Bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely before cutting into squares.
