Ingredients
  

  • 1 cup oat flour blend oats finely for this/ I buy mine ground
  • 1 cup old-fashioned or rolled oats
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon adjust to taste
  • 1/4 teaspoon sea salt
  • 1/2 cup all natural peanut butter the kind you have to stir
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 1/4 cup almond milk or milk of choice - I like Vanilla Almond Milk
  • 1 teaspoon vanilla extract
  • 1 cup frozen blueberries coated in 1 tablespoon oat flour
  • Optional: Handful of dried cherries chopped also toss in flour

Instructions
 

  • Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  • In a large bowl, sift together well all dry ingredients except for the rolled oats. This includes 1 cup oat flour, 1/4 cup almond flour, 1/2 teaspoon baking powder, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon sea salt.
  • Mix the rolled oats into the sifted dry ingredients.
  • In a separate bowl, whisk together the wet ingredients. This includes 1/2 cup all-natural peanut butter, 1/4 cup maple syrup, 1/4 cup honey, 1/4 cup almond milk, and 1 teaspoon vanilla extract.
  • Add the dry ingredients into the wet mixture and stir until everything is evenly combined.
  • In a separate bowl, gently toss 1 cup frozen blueberries and chopped dried cherries (if using) with 1 tablespoon oat flour until they are lightly coated. Add the coated berries to the batter and fold them in until evenly distributed.
  • Press the mixture into the prepared baking pan, spreading it evenly.
  • Bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  • Allow the bars to cool completely before cutting into squares.

Notes

You can absolutely grind oats for oat flour, I just never get it a fine enough texture that way so I purchase mine off Amazon.
I cannot stress enough the need to sift these ingredients. When using baking powder, if not sifted properly into the dry ingredients, you will get bitter clumps. Sifting is key.
