Deliciously Digestive: Apple Bourbon Chicken Sausage Stir-Fry Two Ways

Hello and welcome back to my blog! I have so many recipes to put up and I’m trying to get each one up for you. I had a request to post this Colitis-Friendly Apple Bourbon Chicken Sausage Stir-Fry because my husband is undergoing immunotherapy treatments for stage four metastatic melanoma. I don’t want him to suffer through bland meals just to avoid stomach upset so I have completely changed his diet and this man has not had one single side effect and we are six months into treatment! Nutrition is key.

I am not a medical professional and cannot treat or diagnose, I am speaking on what works for my husband, the man who in the past got EVERY side effect. If you have severe colitis symptoms consult your nutritionist beforehand. I’ll be sure to write up some posts so I can share what other things I’ve been doing to help him out. Enjoy!

Colitis-Friendly Apple Bourbon Chicken Sausage Stir-Fry: Low FODMAP Delight

Enjoy a delightful and digestively friendly stir-fry featuring apple bourbon chicken sausage, vibrant veggies, and a blend of low FODMAP spices. Zested and juiced orange add a citrusy twist to this easy-to-make, colitis-friendly dish. Serve over rice for a satisfying meal!

Ingredients
  

  • 4 chicken sausage links. Make sure they don't contain onion or garlic. This is why I chose apple bourbon. about 1 pound, sliced into 1/4″ rounds
  • 2 bell peppers any color, sliced
  • 2 carrots thinly sliced
  • 1 medium-sized zucchini halved or quartered
  • 1/2 cup green onion tops thinly sliced
  • Zest of half an orange
  • Juice of 1 whole orange
  • 2 tablespoons garlic-infused olive oil
  • 1/4 teaspoon onion replacer
  • 1 teaspoon garlic replacer
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • 1 teaspoon paprika smoked or sweet
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste

Instructions
 

  • Heat 1 tablespoon of garlic-infused olive oil in a large skillet over medium-high heat. *see notes
  • Add sliced apple bourbon chicken sausage rounds and cook for about 5-7 minutes or until browned.
  • Remove the sausage from the skillet and set aside.
  • In the same skillet, add another tablespoon of garlic-infused olive oil.
  • Add sliced bell peppers, carrots, green onions, and zucchini to the skillet. Add seasoning. Stir-fry for 5-7 minutes or until the vegetables are tender-crisp.
  • Add salt and pepper to taste. Mix well.
  • Zest half an orange and add it to the stir-fry. Squeeze the juice of the entire orange over the mixture for a burst of citrus flavor.
  • Add the sliced sausage rounds back to the skillet and mix.
  • Cover and continue cooking until everything is heated through and well-coated with the spices, about 1-2 minutes
  • Garnish with additional green onion tops or fresh herb of choice if desired.
  • Serve over rice or your preferred low FODMAP base.

Notes

To have garlic flavor without the garlic, it is safe to use Garlic Infused Olive Oil  along with low FODMAP Garlic Replacer. You will also be using the same brand low FODMAP Onion replacer, but that is STRONG so be sure to follow the directions. The green onions will make it blend well.
Please check the labels of the chicken sausage to ensure it doesn’t have onion or garlic or this meal will not work for you.

  • 4 apple bourbon chicken sausage links about 1 pound, sliced into 1/4″ rounds
  • 2 bell peppers (I use red and orange for color) sliced
  • 1 carrot thinly sliced
  • 1 medium-sized zucchini halved or quartered
  • Zest of half an orange
  • Juice of 1 whole orange
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • 1 teaspoon paprika smoked or sweet
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste

Instructions
