Ingredients

  • 2 tablespoons olive oil
  • 4 apple bourbon chicken sausage links about 1 pound, sliced into 1/4" rounds
  • 2 bell peppers (I use red and orange for color) sliced
  • 1 carrot thinly sliced
  • 1 medium-sized zucchini halved or quartered
  • Zest of half an orange
  • Juice of 1 whole orange
  • 1/2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • 1 teaspoon paprika smoked or sweet
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat
  • Add sliced apple bourbon chicken sausage rounds and cook for about 5-7 minutes or until browned
  • Remove the sausage from the skillet and set aside
  • In the same skillet, add another tablespoon of olive oil
  • Add sliced bell peppers, carrots, and zucchini to the skillet. Sprinkle seasoning. Adjust quantities based on your taste.
  • Stir-fry for 5-7 minutes or until the vegetables are tender-crisp.
  • Add salt and pepper to taste. Mix well.
  • Zest half an orange and add it to the stir-fry. Squeeze the juice of the entire orange over the mixture for a burst of citrus flavor.
  • Add the sliced sausage rounds back to the skillet and mix.
  • Cover and continue cooking until everything is heated through and well-coated with the spices, about 1-2 minutes.
  • Garnish with additional green onion tops or fresh herb of choice if desired.
  • Serve over rice or your preferred base.
