Apple Bourbon Chicken Sausage Stir-Fry Alt

olive oil

apple bourbon chicken sausage links
about 1 pound, sliced into 1/4" rounds
2
bell peppers
(I use red and orange for color) sliced
1
carrot
thinly sliced
1
medium-sized zucchini
halved or quartered
Zest of half an orange
Juice of 1 whole orange
1/2
teaspoon
onion powder
1
teaspoon
garlic powder
1
teaspoon
ground ginger
1
teaspoon
cumin
1
teaspoon
paprika
smoked or sweet
1/2
teaspoon
turmeric
1/2
teaspoon
ground coriander
Salt and pepper to taste
Instructions
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat
Add sliced apple bourbon chicken sausage rounds and cook for about 5-7 minutes or until browned
Remove the sausage from the skillet and set aside
In the same skillet, add another tablespoon of olive oil
Add sliced bell peppers, carrots, and zucchini to the skillet. Sprinkle seasoning. Adjust quantities based on your taste.
Stir-fry for 5-7 minutes or until the vegetables are tender-crisp.
Add salt and pepper to taste. Mix well.
Zest half an orange and add it to the stir-fry. Squeeze the juice of the entire orange over the mixture for a burst of citrus flavor.
Add the sliced sausage rounds back to the skillet and mix.
Cover and continue cooking until everything is heated through and well-coated with the spices, about 1-2 minutes.
Garnish with additional green onion tops or fresh herb of choice if desired.
Serve over rice or your preferred base.
