
Low FODMAP Chicken with Baby Potato and Carrot Bake – Easy and Flavorful Recipe

I’m not going to make a huge post with tons of ads and a giant story you don’t want to read. That’s a stock photo lol. I’m just making recipes for my husband who has stomach issues and I’ve come up with some decent meals because of it. Here is a low FODMAP chicken, carrot, and potato bake that’s easy on the stomach and the taste buds! Good for two or a dinner with a leftover lunch!

Ingredients:
– 2 boneless, skinless chicken breasts (not too thick)
– 1 lbs baby potatoes, halved (make them uniform in size. I quarter some) Just start throwing them on the tray with everything else and stop cutting when you think that’s all the potato you’ll need for two servings.
– 2 large carrots, peeled and sliced (I did thicker sticks)
– 3 tablespoons Garlic infused olive oil
– 1 tablespoon dried rosemary
– 1 tablespoon dried thyme
– 1 tablespoon paprika
– 1 teaspoon ground cumin
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 cup chicken broth (use Low FODMAP chicken broth if available – just make sure it does not have onion and garlic)
**Instructions:**
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, mix together garlic-infused olive oil, dried rosemary, dried thyme, paprika, ground cumin, salt, and pepper.
3. Place chicken breasts, halved baby potatoes, and sliced carrots in a large baking dish.
4. Drizzle the spice and oil mixture over the chicken, baby potatoes, and carrots. Ensure everything is evenly coated.
5. Pour chicken broth into the baking dish where there are no chicken and vegetables to keep everything moist during baking.
6. Bake in the preheated oven for approximately 25 minutes or until the chicken is cooked through to an internal temperature of 165°, and the vegetables are tender.
7. Remove from the oven, and let it rest for a few minutes before serving.
