- 2 tablespoons garlic-infused olive oil^
- 1 can 28 oz tomato puree (no added garlic or onion)
- 1/2 cup finely chopped green tops of scallions green onions
- 1 teaspoon powdered garlic replacer
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon red pepper flakes optional, for heat, if tolerated
- 1/2 teaspoon ground black pepper
- 1 teaspoon salt or to taste
- 1 tablespoon balsamic vinegar
- 1/4 cup fresh parsley chopped
- 1/4 cup fresh basil chopped
- 1/2 cup low FODMAP vegetable broth optional, for thinning the sauce
Heat 2 tablespoons of garlic-infused olive oil* in a saucepan over medium heat, 1-2 minutes.
Sauté finely chopped green tops of scallions until softened, about 2-3 minutes.
Pour in a can of tomato puree and stir well.
Add powdered garlic replacer, dried oregano, basil, thyme, rosemary, red pepper flakes (optional), ground black pepper, and salt. Stir to combine.
Stir in 1 tablespoon of balsamic vinegar.
Bring the sauce to a gentle simmer, then reduce the heat. Allow it to simmer for 15-20 minutes, letting the flavors meld.
If you prefer a thinner sauce, incorporate 1/2 cup of Swanson low sodium vegetable broth.
Just before serving, stir in 1/4 cup each of fresh parsley and basil. If not using whole amount of sauce, only stir in after sauce is heated and ready.
Taste the sauce and adjust seasonings if needed.
